We teamed up with Daisy from SOMA VINES and winemaker Guillaume from Alsace, France for this project. Guillaume made a delicious natural white wine - Auxerrois from 2019 - that was bottled this year.
In order to express the terroir Guillaume doesn't use any herbicides in the vineyard and doesn't add any chemicals or yeast when making the wine.
Our project is part of SOMA for Good - the social impact arm of SOMA VINES. That's why we want to support Guillaume and his family to sustain their livelihood, their land and its biodiversity.
What is natural wine?
Natural wines are farmed organic and biodynamic and have the absolute minimal chemical or technological intervention throughout the whole production process from the vine to the cellar. Another difference to conventional wines is the natural fermentation process that gives natural wine its name. The only thing that is ever added to natural wine is a tiny percentage of sulfites for the purpose of stabilisation.
